The "Extra Virgin" label you see on supermarket shelves is often treated as a gold standard, but in reality, it is the bare minimum. After the overwhelming response to our Instagram reel, ‘This isn’t supermarket oil,’ we wanted to delve deeper into why our EVOO isn’t just a ‘means to an end,’ but a vital, living ingredient.


The Mission: Transparency Over Marketing

Quality is determined by a timeline. Experts suggest EVOO should be used within 18 to 24 months of bottling, but the "who, when, and how" matters more. We pick and press on the same day and ship in small batches to ensure the oil is kept in premium conditions. We will always declare our oil’s timeline. This is the baseline of quality; if it’s not on the label, it’s not good enough.

Supermarket sourcing is often a "black box." While Spain is the world's largest producer, Italy is the largest importer—often buying and blending oils from various origins to bulk out their stock. This lack of traceability gravely affects the flavor and health profile. You deserve the data. You deserve the truth.

Polyphenols: The Body’s Natural Shield

In my current nutritional studies, I’ve learned that healthy fats should ideally be a part of every meal to aid nutrient absorption. But EVOO is more than just a source of fat; it is a delivery system for polyphenols.

Polyphenols are powerful antioxidants that combat oxidative stress and inflammation. While "heavyweight" varieties like Coratina or Picual are famous for high polyphenol counts, our Arbequina is prized for its elegance and balance. It is lower in bitterness but incredibly versatile and palatable. By pressing while the fruit is still green, we capture higher antioxidant levels than late-harvest oils. For those seeking the maximum "shield," our unfiltered EVOO retains even more of the fruit’s natural goodness.


The Damage Report: Understanding the Numbers

To qualify as Extra Virgin, the acidity must be below 0.8%. In our opinion, that is far too high. You should look for the lowest possible number. Our current harvest sits at 0.13%—an ultra-premium standard that is among the lowest you will find globally.

The Great Filter Debate: Unfiltered vs. Filtered

Unfiltered, "cloudy" oil is a brilliant choice for those seeking a health boost. It carries higher initial polyphenols and a raw, vibrant flavor. However, it requires commitment. Because the sediment (tiny particles of fruit and moisture) can settle and ferment over time, unfiltered oil should be enjoyed regularly once opened.

This speaks to a wider shift in thinking: Olive oil should not be "saved for special occasions." It depreciates with time. Whether you choose Filtered for its smooth stability or Unfiltered for its health profile and robust flavor, the key is to use it generously and often.
